Need healthy low fat recipes that are cheap and easy - PassPorter - A Community of Walt Disney World, Disneyland, Disney Cruise Line, and General Travel Forums
As of January 1, 2019, we have closed our forums. This is a decision we did not come to lightly, but it is necessary. The software our forums run on is just too out-of-date and it poses a significant security risk. The server software itself must be updated, and it cannot be without removing the forums.
So it is with a heavy heart that we say goodbye to our long-running forums. They came online in 2000 and brought together so many wonderful Disney fans. We had friendships form, careers launch, couples marry, children born ... all because of this amazing community.
Thank you to each of you who were a part of this community. You made it possible.
And a very special thank you to our Guides (moderators), past and present, who kept our forums a happy place to be. You are the glue that held everything together, and we are forever grateful to you. Thank you aliceinwdw, Caldercup, MrsM, WillCAD, Fortissimo, GingerJ, HiddenMickey, CRCrazy, Eeyoresmom, disneyknut, disneydani, Cam22, chezp, WDWfan, Luvsun, KMB733, rescuesk, OhToodles!, Colexis Mom, lfredsbo, HiddenMickey, DrDolphin, DopeyGirl, duck addict, Disneybine, PixieMichele, Sandra Bostwick, Eeyore Tattoo, DyanKJ130, Suzy Q'Disney, LilMarcieMouse, AllisonG, Belle*, Chrissi, Brant, DawnDenise, Crystalloubear, Disneymom9092, FanOfMickey, Goofy4Goofy, GoofyMom, Home4us123, iamgrumpy, ilovedisney247, Jennifer2003, Jenny Pooh, KrisLuvsDisney, Ladyt, Laughaholic88, LauraBelle Hime, Lilianna, LizardCop, Loobyoxlip, lukeandbrooksmom, marisag, michnash, MickeyMAC, OffKilter_Lynn, PamelaK, Poor_Eeyore, ripkensnana, RobDVC, SHEANA1226, Shell of the South, snoozin, Statelady01, Tara O'Hara, tigger22, Tink and Co., Tinkerbelz, WDWJAMBA, wdwlovers, Wendyismyname, whoSEZ, WildforWD, and WvuGrrrl. You made the magic.
We want to personally thank Sara Varney, who coordinated our community for many years (among so many other things she did for us), and Cheryl Pendry, our Message Board Manager who helped train our Guides, and Ginger Jabour, who helped us with the PassPorter-specific forums and Live! Guides. Thank you for your time, energy, and enthusiasm. You made it all happen.
There are other changes as well.
Why? Well, the world has changed. And change with it, we must. The lyrics to "We Go On" for IllumiNations say it best:
We go on to the joy and through the tears
We go on to discover new frontiers
Moving on with the current of the years.
We go on
Moving forward now as one
Moving on with a spirit born to run
Ever on with each rising sun.
To a new day, we go on.
It's time to move on and move forward.
PassPorter is a small business, and for many years it supported our family. But the world changed, print books took a backseat to the Internet, and for a long time now it has been unable to make ends meet. We've had to find new ways to support our family, which means new careers and less and less time available to devote to our first baby, PassPorter.
But eventually, we must move on and move forward. It is the right thing to do.
So we are retiring this newsletter, as we simply cannot keep up with it. Many thanks to Mouse Fan Travel who supported it all these years, to All Ears and MousePlanet who helped us with news, to our many article contributors, and -- most importantly -- to Sara Varney who edited our newsletter so wonderfully for years and years.
And we are no longer charging for the Live Guides. If you have a subscription, it's yours to keep for the lifetime of the Live Guides at no additional cost. The Live Guides will stay online, barring server issues and technical problems, for all of 2019.
That said, PassPorter is not going away. Most of the resources will remain online for as long as we can support them, and after that we will find ways to make whatever we can available. PassPorter means a great deal to us, and to many of you, and we will do our best to keep it alive in whatever way we can. Our server costs are high, and they'll need to come out of our pockets, so in the future you can expect some changes so we can bring those costs down.
Thank you, thank you, thank you for your amazing support over the years. Without you, there's no way us little guys could have made something like this happen and given the "big guys" a run for their money. PassPorter was consistently the #3 guidebook after the Unofficial and Official guides, which was really unheard of for such a small company to do. We ROCKED it thanks to you and your support and love!
If you miss us, you can still find some of us online. Sara started a new blog at DisneyParkPrincess.com -- I strongly urge you to visit and get on her mailing list. She IS the Disney park princess and knows Disney backward and forward. And I am blogging as well at JenniferMaker.com, which is a little craft blog I started a couple of years ago to make ends meet. You can see and hear me in my craft show at https://www.youtube.com/c/jennifermaker . Many PassPorter readers and fans are on Facebook, in groups they formed like the PassPorter Trip Reports and PassPorter Crafting Challenge (if you join, just let them know you read about it in the newsletter). And some of our most devoted community members started a forum of their own at Pixie Dust Lane and all are invited over.
So we encourage you to stay in touch with us and your fellow community members wherever works best for you!

Need healthy low fat recipes that are cheap and easy
I know what I'm asking for isn't easy but I'm an empty nester while dd is away at college and I'm trying to lose some weight more for health reasons than anything else (I have a goal to see how many times I can get to WDW if I live to 90) but looking better would be a great side effect. I have stocked my fridge with yogurt which is my go to instead of ice cream or a late afternoon snack at work. I've been drinking only water (plain and infused with lemon, cuccumber etc) or skim milk. Switched from bacon to turkey bacon etc. Just trying to get this jumpstarted. It's so much easier to exercise and eat more fruit and veggies in the nice weather but every other day it seems to snow here. I have been doing 2 miles a day on the eliptical (I will miss Tuesday and Friday this week because I'm going to school to watch dd's hockey games). I started out at 221.5 and after a week I'm down to 218 (I know you lose the most at the beginning then start to level off). My goal is for my weight to start with a 1 (I'm 5'7" by the way)
You are doing everything the right way. I did all of those also, however, I did cut back drastically on the amount of breads, pastas, and potatoes I ate. Bread alone has made a huge difference. I don't eat white bread at all. I stick to whole grain, pumpernickel, or rye. It's very rare I eat any kind of potato chips. That has helped also. Lots of fruit, veggies, eggs, salads...
I have been avoiding "white" food for a while due to a family history of heart issues so I try not to eat white bread, white potatoes, white rice. I've switched to 1 packet of splenda in my 1 cup of coffee a day to avoid white sugar alittle. I've also tried not to bring junk food into the house which is easier with dd gone. The only snack I have is 100 calorie bags of popcorn or chips and salsa.
Kris, you should totally join our challenger group here on PP! We even have a thread with "challenger-friendly" recipes there. Send me a message if you're interested or have further questions.
I make an Italian Skillet chicken that is based on a weight watchers recipe, but that I've adapted over time. The original recipe is to serve 4, but it would be easy to make half and then have left overs for a second meal.
Chop a small onion, some carrots and celery and sauté in a small amount of olive oil. I chop mine fine, but you can certainly leave bigger chunks if you prefer. Add one clove of minced garlic (or you can use garlic powder if you prefer. Cut up 1 pond of skins boneless chicken breasts into large bite sized pieces and add to pan cooking until chicken begins to brown on all sides. Add 2 cans of diced tomatoes. I use the ones with garlic, oregano and basil, but you could use regular ones and just add the seasoning. Cover and cook for 15-20 minutes. I sometimes add a little chicken stock if I need to. I also taste the "sauce" after about 1/2 the cooking time and add more basil, garlic and oregano to taste. I sometimes also add a bit of seasoned salt. When done if it's too watery take the top off and simmer for a few more minutes to thicken up.
While you're cooking the above you can bring the water for pasta to a boil. I like to use whole wheat pasta - usually penne, but any kind will do. I usually use 1 box. When it's all done serve the chicken and sauce on top of the pasta. Some times I drain the pasta and add it to the sauce for the last few minutes of cooking.
If you want to 1/2 it - use 1/2 pound of chicken, 1 can of tomatoes, 1/2 an onion and fewer carrots and celery.
Thanks for the recipe Leslie. I love recipes that can easily be cut in half. When you cook something too big as a single person you end up having to eat for days on end in order to not waste it and then I'm sick of it.
I suggest the Amer. Heart Assn's Diabetes & Heart Healthy Meals for Two cookbook. There's a lot of variety, most are easy to fix, obviously healthy and best of all, not much for leftovers.
The recipes are a bit foodie-oriented and sometimes call for fresh herbs. You can easily substitute about 1/4-1/2 the amount of dry herbs, I've found. Your public library likely has this one. I've seen it in ours if you want a looksee before buying. We LOVE the pork medallions with dark cherry-balsamic vinegar sauce! Deeeelish.

I'm not sure if you like them, but chicken fajitas are my go to when I'm cooking for just me, which is often. I make them healthy by making my own seasoning... basically cumin\mexican chili powder\a little garlic powder\pepper\a pinch of salt\and a pinch of truvia or stevia based sweetener.
If you're looking to stay away from simple carbs you can serve the chicken and veggies over brown rice or quinoa (sp??)
You can also pre pack raw items in single serve packs for freezing -- simply saute and eat

Also, because of the current season, I find spaghetti squash for $0.99 each at my supermarket, and one will easily make 3-4 meals for just myself. Just bake or microwave and top a cup or two with some pasta sauce and a little Parmesan cheese!
